The easiest way to make dinner feel like Halloween πŸŽƒ

all my favorites | recipes | videos

Hi Reader,

Halloween recipes tend to be all about cookies, cupcakes and sweet treats. And I love those too! But this year I thought it would be fun to get dinner involved. πŸŽƒ

So I made these little jack-o'-lantern stuffed peppers. They're basically stuffed peppers dressed up for Halloween, complete with triangle eyes, wonky smiles and a cheesy turkey filling.

And don't worry if you're not much of a pumpkin carver. The faces don't have to be perfect. In fact, I think the funny-looking ones have the most character!

I also love that they're a complete balanced dinner, with protein from the turkey, fiber from the beans and vegetables, and lots of flavor.

Jack O'Lantern Stuffed Peppers

Orange bell peppers filled with ground turkey, black beans, corn, tomatoes and cheddar.

A few things I like about this recipe:

  • Easy to prepare ahead. The filling can be made in advance.
  • No fancy carving skills needed. A few simple shapes do the trick.
  • Something the family can help with. Little ones can spoon in the filling and sprinkle on cheese; leave the knife work to an adult.

🍳 One little tip: Choose peppers with flat bottoms so they stand upright while baking. Simple faces work best, especially once they're filled!

Hope your week is full of good food and good rest 🀍

P.S. If you make any of these recipes, I'd love it if you would leave a star rating ⭐️ on my website. It helps my small business and our community so much!

Stay happy & healthy!

all my favorites | recipes | videos Hi Reader, It's no secret that I am a big fan of oats in all shapes and forms. But recently, I've been making these fluffy blended baked oats, which are almost like having a little cake for breakfast! The trick is really simple. Instead of baking the oats whole, I blend everything into a smooth batter first. It completely changes the texture, making them soft, light and fluffy rather than your usual bowl of oatmeal. I've been adding flaked almonds and a...

all my favorites | recipes | videos Hi Reader, There are certain foods that just taste better at this time of year, and warm apple crumble is definitely one of them. So this week’s Sunday Spoonful is one of my older recipes that deserves another moment: my healthy apple crumble with oats. It has everything I want from an apple crumble; warm cinnamon apples and a crunchy oat topping... but I’ve made a few simple tweaks so it’s a lot more filling and works just as well for breakfast as it does...

RECIPES | YOUTUBE | SHARE FEEDBACK Hi Reader, Welcome to that time of year when every coffee shop menu suddenly turns into pumpkin, maple, caramel and cinnamon everything. πŸŽƒβ˜• And I’m here for it. But seasonal drinks are also one of those places where sugar can add up surprisingly quickly. And there’s something important I want you to know before you look at the nutrition information and panic at the sugar number. Total sugar and added sugar are not the same thing. Take a latte made with dairy...
