Hi Reader,

There are certain foods that just taste better at this time of year, and warm apple crumble is definitely one of them.

So this week’s Sunday Spoonful is one of my older recipes that deserves another moment: my healthy apple crumble with oats.

It has everything I want from an apple crumble; warm cinnamon apples and a crunchy oat topping... but I’ve made a few simple tweaks so it’s a lot more filling and works just as well for breakfast as it does for dessert.

The topping is made with oats, peanut butter, egg whites and seeds, and I usually serve it warm with Greek yogurt.

That brings one serving to around 24g of protein and 11g of fibre, while still very much tasting like apple crumble rather than a “healthy breakfast.”

🍳 A small oven-safe dish works best for this recipe. If doubling or tripling, use a larger dish and adjust the baking time slightly

I invested in the Le Cresuet Heritage set of 3 baking dishes a while ago and I use them constantly. The smallest one is perfect when I’m making 2 servings of this, and I’ll use the largest if I’m making a bigger batch for the week.
